Praline pastes

Made to a traditional chocolate maker’s recipe and pro- duced by the praline process i.e. roasting the kernels in melted sugar and rolling without additives.
The noticeable caramel taste creates space for interesting combinations of flavour, for example with a firm gianduja. Praline pastes are also used to flavour ice cream and yoghurt.
